Our Story
Charles left France about 8 years ago to live in Australia, but one thing never left him: his craving for la praline rose, the pink praline pastries he grew up with in Lyon, in east-central France.
A passionate home baker with an entrepreneurial streak (and a touch of madness, by his own admission), Charles decided to stop missing it and start making it. After years in the corporate world, he packed his suitcase and his hometown's recipes and brought Lyon's most beloved gourmandise to Sydney.
Pépite Rose, French for "pink nugget," was born from that craving. Every brioche is handcrafted locally in Sydney, in small batches, the way it's done back in Lyon: real French pink pralines, quality butter, and no shortcuts. You'll find Charles and his pastries at Le Marché, Sydney's French market every first and second Sunday of the month. Make sure to come early as we usually sell out!
What is a Praline Rose?
Imagine caramelised nuts dusted in soft pink, that's La Praline Rose, a Lyon speciality made from almonds and hazelnuts coated in a crisp, rose-coloured sugar shell.
At Pépite Rose, we fold this beloved praline into a buttery brioche to create 'La Pépite Rose', one of the most authentic and addictive sweet pastries of the Rhône-Alpes region. For generations, it has been a year-round ritual in Lyon and it now lives in Sydney.
Made with care
We source quality ingredients from trusted producers in both France and Australia, because freshness and authenticity aren't negotiable.
Every batch is made by hand, in small quantities, with the goal of bringing something genuinely unique to your table, made with care, and a fair amount of love.
